Ingredients

  • Silken tofu (or firm tofu): 1 box (cut into cubes)

  • Minced pork (or minced beef): Approx. 4 oz (adds a rich, savory meat flavor)

  • Green onions (scallions): As needed (finely chopped for garnish)


Aromatics for Searing

  • Minced garlic: 1 tbsp

  • Minced ginger: 1 tsp


Seasoning & Sauce Base

  • Spicy bean paste (Doubanjiang): 1–1.5 tbsp (the key source of red chili oil and savory flavor)

  • Sichuan peppercorn powder or chili oil: To taste (the soul of the dish that provides the signature numbing sensation)

  • Broth or water: Approx. 1 cup

  • Cornstarch slurry: As needed (cornstarch mixed with water for thickening)

Cooking Steps


Step 1: Pre-treating Ingredients

  1. Soak in Warm Salt Water: Cut the tofu into cubes. Soak them in warm salt water for 5 minutes, then gently scoop them out and drain. Set aside.

  2. Chop Aromatics: Finely mince the ginger and garlic. Finely chop the green onions.

Step 2: Brown the Meat & Cook Aromatics

  1. Render Meat Fat: Heat oil in a wok or pan. Add the minced pork and stir-fry over medium heat until it changes color. Keep cooking until the surface is slightly browned and the fat renders out.

  2. Release Chili Oil: Add the minced ginger, minced garlic, and spicy bean paste. Turn the heat down to low and stir-fry slowly until the red oil separates and the mixture becomes highly aromatic.

Step 3: Simmer Tofu & Thicken Sauce

  1. Simmer Tofu: Pour in the broth or water and bring it to a boil. Gently add the tofu cubes. Turn the heat down to low and simmer for 3–5 minutes, allowing the tofu to fully absorb the savory sauce.

  2. Thicken in Stages: Turn the heat up to high. Swirl in the cornstarch slurry in 2–3 separate additions. After each addition, use the back of your spatula to gently push the tofu forward until the sauce thickens and perfectly glazes every cube.

Step 4: Garnish & Serve

  1. Turn off the heat and transfer to a serving plate. Generously dust the top with Sichuan peppercorn powder (or drizzle with peppercorn oil) and scatter the chopped green onions. Serve hot!

Shopping & Cooking Tips

  • How to choose tofu (Shopping Tip): When buying ingredients, if you prefer a silky texture, buy silken tofu (soft tofu), but you must handle it very gently when cooking. If you worry about it breaking, buying firm tofu or packaged "Mapo Tofu Specially Made" varieties will hold their shape better and won't fall apart easily.

  • Soak in warm salt water (Chef's Tip): The warm salt water soak in Step 1 is crucial. The salt draws out excess water from the tofu, tightening its texture so it does not break apart easily when stirred. It also effectively removes any raw, gamey bean smell.

  • Push, don't stir (Cooking Tip): Once the tofu is in the wok, never stir it back and forth like you are stir-frying regular vegetables. Always use the back (the smooth side) of your spatula to gently push the tofu forward from the bottom of the pan. This keeps the cubes beautifully whole.
